How to Roast Green Beans
Oven roasted green beans are sweet, tender, and delicious. You can keep them simple and roast them with oil, salt, and pepper or try our garlic caper mix for an extra pop of flavor.
To roast the beans, follow these simple steps. (The full recipe is below.)
Toss trimmed green beans with oil, salt, and pepper, and then spread them onto a baking sheet, making sure that they are in one layer. If they are piled on top of each other, they will steam instead of roast.
Bake the beans in a 425° F oven until tender and slightly wrinkled. This takes 10 to 15 minutes.
Toss the roasted beans with a mixture of minced garlic and capers, and then roast them for another few minutes. Serve the green beans with some fresh dill scattered over the top. So good!
I love these beans with mashed potatoes and gravy or on the side to these juicy skillet pork chops. We also use this garlic and caper flavor combination when making this baked salmon. These beans and that salmon would be an excellent duo.

Garlic Herb Roasted Green Beans
Here’s our easy roasted green beans recipe made with garlic, capers, and herbs. You can make these beans in about 20 minutes! Our family loves these tasty, perfectly cooked green beans!
In the recipe below, we have shared a basic recipe as well as an optional step to finish the beans with a mixture of garlic, capers, and herbs (delicious).
You Will NeedBasic Roasted Green Beans
1 tablespoon olive oil
1 pound green beans, stem ends snapped off
1/4 teaspoon fine sea salt
1/4 teaspoon fresh ground black pepperOptional Garlic Caper and Herb Version
2 tablespoons drained capers, roughly chopped
1 tablespoon minced garlic, 3 to 4 cloves
1 tablespoon chopped fresh dill or use 1 teaspoon dried dill
Heat the oven to 425 degrees Fahrenheit (220C). Line a baking sheet with parchment paper or a silicone baking mat — lining the pan is not entirely necessary, but this does help with cleanup.
In a large bowl, toss the green beans with the oil, salt, and black pepper. Add the seasoned beans to the baking sheet. Spread them out into one layer.
Roast until the beans are tender and a little wrinkled, 10 to 15 minutes.
Serve or continue to the next step if you are making the garlic herb green beans.
Add the garlic and capers to the roasted beans. Toss well, spread everything out into a single layer, and continue to roast for another two to three minutes so that the garlic cooks. Toss well, and then serve with the dill sprinkled over the top.
